How to make a really tasty spicy (as spicy as you want) chicken stew.
All you need is:
* 1 kg Boneless chicken
* 3 Peppers
* 250 gr Mushrooms
* 4 pcs Garlic
* Fresh chili of your choice
* 1 Leek
* 2 Egg whites
* 2 tbsp Cornstarch
* 2 dl Water, Sherry or white wine
* 3 tbsp Soy sauce
* 20 gr Chicken broth
* 2-4 tbsp Sambal oelek
First velvet the chicken using 2 egg whites and 2 tablespoons of cornstarch. Cut the chicken against the fibres and then let it marinate in the mix for up to 30 minutes in a refrigerator.
Wipe off the mixture and stir-fry it very quickly in hot oil until the color turns white, then let it rest while you cut up all the vegetables and stir-fry them before you add back the chicken.
For the broth mix you will need 2 decilitres of water, Sherry or white wine, 3 tablespoons of soy sauce, 20 gr (usually 2 pieces) of chicken broth and 2-4 tablespoons of Sambal oelek. Add as much chili as you can stomach depending on how spicy you want the stew!
Mix it all together and let it cook on a lower temperature under a lid. The longer you let it cook the better!
