Here's how to host a server easily, and for free without needing to port forward at all and also set up simple voice chat on playit gg. While this only works for java players, you can combine this with geiser to let bedrock players join too (without using vc).

Wasn't mentioned in this video, but if you're hosting with fabric you should 100% install lithium (modrinth.com/mod/lithium) to your mods folder for better performance at no cost.
