Mirror Glaze Recipe
Ingredients
2 packets of gelatin (5 tsp) + ½ cup water
2 cups white chocolate chips
1 ½ cups white sugar
2/3 cups sweetened condensed milk
½ cup water
Black and white gel food color
Directions
1. Mix together gelatin and ½ cup water and leave to bloom (about 5 minutes – mixture will thicken and become solid). Place chocolate chips in a large heatproof bowl and set aside.
2. In a medium saucepan, place sugar, sweetened condensed milk, and the remaining ½ cup water. Bring to a simmer (just so it’s warm enough to dissolve the sugar and melt the gelatin), then add in bloomed gelatin. Stir until smooth.
3. Pour mixture over the chocolate chips and let set for 3 minutes. Stir gently until smooth.
4. Measure out ½ cup mirror glaze into a spouted container and color white. Pour black mirror glaze into white and fill to 2 cup mark. Swirl with a popsicle stick for a more marbled effect.
5. Before pouring over cake, ensure that glaze is body temperature (i.e. when you feel the sides of the container, it shouldn’t feel too warm or cold because it’s the same temp as your fingers). Pour glaze over cake and enjoy!
