Isn't this how you're supposed to do it?
You only get 1 carrot in RCE, and though it's not necessary to use, it makes it a bit easier. You might want to position Epona a little farther away so that you don't waste it, but if you go too far away, she'll unload, and she can't kill Big Poes if she's unloaded.
