Uncle Scott shows his recipe for fried squash and fried zucchini. The recipe:
1. Wash and dry any combo of up to four zucchini and/or yellow squash.
2. To a shallow bowl for a dredge, add 2 cups all-purpose flour, 1 teaspoon salt, 1 teaspoon black pepper, 1/4 teaspoon onion powder, 1/4 teaspoon garlic powder, a shake of cayenne, and a shake of paprika. Combine well.
3. Set up a dunk-and-dredge assembly line with the flour mixture in one bowl, 1 to 2 cups milk in another, and a cup of breadcrumbs in a third. You may need to add fresh breadcrumbs if the first batch gets soggy/sticky when dredging.
4. Slice the squash and zucchini in 1/4 inch slices.
5. Dunk the slices in the milk, then dredge them in the flout mixture. Place on a wire rack over a baking sheet.
6. DOUBLE-DUNK: Re-dunk each slice in milk, then dredge in the bread crumbs, and replace onto the wire rack.
7. Bring a nice, big frying pan along with some good frying oil up to medium heat on your cooktop. Add a test piece of zucchini/squash. Use enough oil so that it comes up halfway on the test piece.
8. When the test piece is sizzling nicely, add more pieces to the pan. Work in batches and don't overcrowd the pan. Check at two minutes. If alreayd brown, reduce heat. I like mine to cook around three minutes per side, which gets the interior cooked about the same time the breadcrumbs brown.
9. Cook until they are the color and crunchiness you like. Remove them to paper towels or a wire rack to rest and drain. Salt immediately.
10. Chow down!
