How to cook the Perfect Ribeye (on the Weber Kettle Performer)  @paulsq_

Hi everyone! In this video I show how to cook a nice 2.5 lbs ribeye that I had cut 2” thick to a perfect medium rare. I seasoned the steak with just salt and pepper. This cook took a total of 1 hour and a half, flipping once when the steak reached 90-95 degrees about 45 minutes into the cook, finish cooking to a temp of 125. Then get the coals red hot and start searing it. Sear for 30 seconds to 1 minute each side twice just to get a great sear on it. This will also bring the temp up to around the 135 degree mark which is where you want it at. Be sure to let the steak rest for a minimum of 5 minutes before you slice into the best steak you’ve ever eaten.
