Stir fry chicken with bean sprouts
Half fresh chicken breast (cut into strips)
A handful of fresh bean sprouts
Few slices of fresh carrots
Few slices onion coarsely chopped
3 cloves garlic
1 spring onion
1 teaspoon of potato starch to coat the chicken.
Condiments
2 tablespoon vegetable cooking for stir fry
1 teaspoon light soy sauce
Dash of cooking wine (I used shao xing brand)
Dash of white pepper powder
Dash of sesame oil
2g salt
2g MSG
Light thicken with potato starch.
Cut the chicken breast into strips and coat it with half to one teaspoon of potato starch; this gives the chicken a soft silky texture after cooking.
Blanch the bean sprouts and carrots in hot water for about 1 minute; drain and set aside.
Next blanch the chicken in hot water for about 3 minutes and set aside to drain off excess water.
Heat wok and with a couple tablespoon of vegetable cooking oil and add the garlic and onion. Stir fry for about 1 minute before adding the rest of the ingredients.
Add the condiments above in order listed and stir fry thoroughly for about 2 minutes and lightly thicken with some potato starch.
Finally add the spring onion to complete the dish.
