This video is very difficult for me to make and put out there. It feels very vulnerable. However, I think there are more of us out there who homeschool through mental illness or chronic illness than we may realize. I want you to know that you aren't alone. You are enough.
***Update*** Since this video was posted, I have been diagnosed with hEDS, POTS, and Chronic Fatigue Syndrome. These were all part of my chronic illness struggle at the time of filming, and likely explain my symptoms more than the diagnoses I had I the time. At this time in my life I was struggling with Chronic Depression, but I now believe that was driven by the underlying chronic conditions I understand I have now. The message of the video remains the same.

Kickin' Crockpot Chili (not spicy - kid friendly)
3 Cups Dry Black Beans of your Choice (I use pinto, black, and navy)
1 T Cumin
1/2 t chili powder
2 Cloves Garlic (or garlic powder)
1 med onion (or onion powder)
approx 1-2 T soup broth seasoning
26 or 28 oz can crushed tomatoes (or lightly blend 2 small cans diced tomatoes)
1/2 C brown rice or quinoa
Add more garlic and onion powder if desired
Salt to taste
1) Cook dry beans according to package directions
2) Add cooked beans, cumin, chili powder, tomatoes, minced garlic, finally chopped onion, broth seasoning, and additional spices. Let simmer for the day.
3) Add rice 1-2 hours before serving
4) Add water throughout as needed
5) Add any Additional Seasoning
Cornbread
1 1/4 C Flour (rice or wheat)
3/4 C Cornmeal
1/8 C Sugar
2 tsp Baking Powder
1/2 tsp Salt
1 C Milk (we use almond or rice milk)
3 TBS Applesauce
1/4 C Oil
1 TB cornstarch mixed with 1 T water (optional, but makes a difference)
1 Can Corn (optional - we usually omit)
1) Heat oven to 400F
2) Grease Muffin Pan
3) Combine Dry Ingredients
4) Stir in wet ingredients, mixing just until dry ingredients are moistened
5) Add corn and mix well
6) Pour batter into prepared pan
7) Bake 20-25 minutes or until light golden brown
I usually like to serve these with a couple green vegetables. Canned green beans are easy. Often we will have broccoli or roasted burussels sprouts. Cabbage works well too. There are lots of options.

Hi! I’m Laura, homeschooling mom to three. I’m excited to share our homeschooling journey with you. We tend to follow a child led unit study approach to homeschooling. While I pull from many educational philosophies, if I had to pick one way to describe our homeschool, it would be Braveschooling (based on Julie Bogart's book "Brave Learner"). The thing about home education though, is that each family and life stage are so different. No two homeschools look the same. My hope is that by sharing my journey, I can offer support, encouragement, and inspiration to help you think outside the box to create a dynamic homeschool experience tailored to your family.
