Homemade Slaw and Mayo
In this video I slip into the kitchen and show you how to make my homemade slaw and mayo.
Mayo:
2 Eggs
1 tsp Mustard
1 Lemon
2 Garlic Cloves
Pinch of Salt
400ml Vegetable oil
Blend the the Eggs, mustard, lemon juice, garlic and salt with and hand bender on high speed in a tall container.
Then leaving the blender in the mix (not on) gently pour the oil down the side so that the oil sits on top.
Now you car start to blend again slowly incorporating the oil.
You should see it starting to turn white and thinker up.
You are done when it is think like mayo.
Taste for seasoning and add more salt or lemon if needed.
Store in a container with a lid or squeeze bottle for up t to two week in the refrigerator.
Slaw:
Mayo
1 Red cabbage
3 Beet root
1 Red onion
1 Lime
1tsp Fennel Seeds
Salt and pepper
Peal and chop in half the onion, then thinly slice it and put into a small bowl.
Add the juice of 1 lime and mix that well, then set aside.
Peal the outer leaves off the cabbage and then carefully cut in half.
Thinly slice (or a bit checker if you like bigger bits of cabbage) your cabbage and place into a large bowl.
Thinly slice the beetroot in too dices, the cut them again to then turn into strips of beetroot.
Add your onion, big spoon of mayo (you can add more if you like it saucy), add your fennel seeds and a pinch of salt and pepper.
Mix with a spoon or clean hand and make sure everything is coated.
And enjoy with some amazing homemade sausage rolls or burgers.
