Homemade Mozzarella Attempt #1  @PhyllisStokes

Gave it a good try but it didn't turn out the way I wanted it to. Any tips? Let me know!
Ingredients:
1/2 gallon whole milk
5 Tablespoons white vinegar (I used 5 OUNCES--don't know why. Got my measurements confused)
- That made the curds dry and crumbly, I think
- Don't do that. Use 5 TBS

Directions:
1. Heat milk in a large saucepan over medium heat. Watch temperature. When it reaches 110F, take it off heat.
2. Add vinegar and stir. Cover the saucepan and let it sit for 15-20 minutes. Curds should begin forming.
3. Strain out curds into your cheesecloth. Squeeze out as much whey as you can.
4. Reheat cheese in whey or in a microwave for 30 seconds.
5. Pull and fold cheese until smooth. Form into a ball and put it in a bowl of cold water for 15 minutes.

Cut and serve.
