Recipe below:
I love gingerbread cookies!!! The spices are so lovely. I hope you enjoy this recipe.
Dry
3 cups all purpose flour
3 tsp cinnamon
3 tsp ginger
1 stp allspice
1 tsp cloves
1 tsp nutmeg
1 tsp black pepper
1 tsp salt
1 tsp baking soda
Mix all dry ingredients together.
Wet
3/4 cup (170 grams) unsalted butter, warmed
1/2 cup brown sugar, packed
2/3 cup molasses
1 large egg
Beat butter and sugar together. Then add molasses and mix. Then mix in 1 large egg.
Gradually and slowly at first mix the dry flour mixture into the wet one.
Divide the dough into two.
Cover in plastic wrap and chill in the fridge for 1.5 hours.
Roll dough one at a time. If dough is too cold, allow to warm up for about 10 minutes. Roll dough on a floured surface until about 0.5 cm thick. Cut out cookies into desired shape. For softer cookies, roll dough slightly thicker. Gently knead the scraps together and roll out again to cut more cookies.
Preheat to 340 degrees and bake for 5-6 minutes until edges and bottom are golden brown.
