Here's how I made cake doughnuts. I've used another recipe in the past and this one is far better. The buttermilk makes a big difference.
Buttermilk Doughnuts
2 eggs
1 cup sugar
2 1/2 tbsp. butter, melted
1/2 tsp. vanilla
2 3/4 cups all purpose flour
1 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
1/2 tsp. ground nutmeg
1 cup buttermilk
Oil for frying
For cinnamon powdered doughnuts:
1 cup confectioners sugar
2 tsp. cinnamon
Mix together the confectioners sugar and cinnamon and set aside. In a large mixing bowl, beat eggs and sugar until light and lemon colored. Add butter and vanilla and mix well. Combine flour, baking powder, baking soda, salt and nutmeg. Add to egg mixture alternately with buttermilk. Cover and refrigerate for 2-3 hours. On a lightly floured surface, roll dough to 1/2" thickness. Cut with a floured doughnut cutter. Heat oil to 375 degrees. Fry doughnuts, a few at a time for 1 minute on each side or until golden. Drain on paper towels. Roll in sugar if desired. Makes 2 dozen.
