This week's video is all about healthy snacks you can eat before sitting down to write! We all know that food is fuel, and your brain needs the right kind of fuel to keep your writing tip top. My video has veggie chips, a green smoothie, baked chickpeas, trail mix, energy bites, and popcorn two ways. All recipes are vegan, save for the bit of honey in the energy bites, and are gluten-free and dairy-free.
Energy bites:
**chill in fridge for an hour after shaping**
3/4 C chopped trail mix
1/2 C gluten free oats
2 tbsp chia seeds
4 tbsp water
1/4 C coconut oil
1 tsp honey
3/4 C nut butter
--Carrot cake: add 1/4 tsp cinnamon, 1/4 tsp turmeric, 1/2 C chopped carrot
--Coconut cranberry: add 1/2 C coconut, 1/4 C cranberries
