Ingredients:
1 cup chopped onion
2 cups peeled and cubed potatoes
½ cup sliced carrots
½ cup sliced celery
¼ TSP each salt and pepper
1 TBSP minced garlic
2 TBSP butter
¼ cup all-purpose flour
2 cups milk
1 cup shredded smoked Gouda cheese
1 cup leftover fully cooked ham cubed
¾ cup frozen peas
Directions:
1. Heat oil in large saucepan over medium heat and add onions, potatoes, carrots and celery. Add salt and pepper and sauté veggies until onions are tender.
2. Add garlic, broth. Simmer on medium low heat for about 10-15 minutes, then continue to cook at low heat.
3. Meanwhile, in a different saucepan, melt the butter on medium heat and stir in flour until a paste is formed. Gradually whisk in milk and cook until slightly thickened. Whisk in cheese until melted.
4. Slowly stir milk mixture into veggie mixture, then add ham and peas; heat through at low heat.
5. Once cooled, portion soup into four portable containers for delicious and quick meals on the road.
