Blueberry Bar Recipe:
Blueberry jam:
1.5 cups frozen blueberries
1 Tbsp chia seeds
1 Tbsp cornstarch
1 tsp lemon juice
1. Microwave 2 minutes.
2. Mash blueberries and mix.
3. Set aside to thicken up.
Base:
1 can garbanzo beans, rinsed & drained
1/2 cup almond flour
1/2 cup oats
2 Tbsp peanut butter powder
4 medjool dates, pitted
2 ripe bananas, mashed
1 tsp vanilla
1. Preheat oven to 350 degrees.
2. Pulse all together in food processor until combined, it’s ok if it’s a little crumbly.
3. Line a loaf pan with parchment paper. Press dough firmly in pan, leaving 2 tbsp aside.
4. Pour jam over dough.
5. Crumble leftover dough over the top.
6. Bake in preheated oven for 30 minutes.
7. Let cool completely before slicing.
Yield: 5 bars
