I finish most of my steaks with what can only be described as an irresponsible amount of butter and herbs. But does it really improve the flavor, or is basting actually bullsh*t?
To find out, I put myself through a blind triangle test. The results were clear: when herbs were involved, I could easily tell the basted steak from the unbasted one. But things got more interesting when I compared a traditionally basted steak to one simply brushed with herb-infused brown butter after cooking.
The verdict? Basting definitely makes steak more delicious, but the herbs and butter may be doing more of the heavy lifting than the technique itself.
