An authentic Mexican meal to celebrate Matt’s 45th birthday! All made with love. Matt's parents came from Maui to the Big Island for a long weekend with the family.
Tamales made from scratch, from the masa to the mole and everything in-between transported from Maui with red mole sauce. Matt's parents also brought sopa, a simple side dish served with tomatoes, onions and oregano to share along with refried beans made by Matt's sister.
I made posole for the first time with Tia Rita's posole mix given to me from a friend on Las Cruces, New Mexico. This posole mix is the real deal. Easy to make; just takes attention, time, and the right cut if pork. All said and done, four hours for a full batch is enough for at least one meal for six, and leftovers you can freeze. It's the soaking of the blue corn hominy we found tricky. The hominy wasn't blooming like I was used to seeing with the white version, but was incredibly tender after hours of simmering.

Since Matt's sister and her husband moved here in November of '22 they have been gracious hosts to family and friends, so that's the spot this was captured in Mauna Loa Estates with their loyal dog Mojo.
