1) Have a player turn on two controllers so he's playing split-screen.
2) Have another player sit on a mongoose while the person who has two controllers puts his guest on the back as a passenger.
3) The player with two controllers uses the one not riding as a passenger to spawn a man cannon and moving it towards the mongoose until it goes flying.
