INGREDIENTS - Lobster Grilled Cheese

2 x lobsters 1 1/2 lbs cooked
1 x onion
1 x carrot
Cayenne pepper
250ml white wine
50ml brandy
75ml double cream
500ml chicken stock
1 tbsp tomato puree
Bay leaf
Tarragon
250ml Bechamel
200g Guerue
Crosta & Mollica Farina Pugliese Bread
2 x Lemon
Large wooden skewers
Butter
