Chickpea 'Tuna' Salad:
1/2 small purple onion
1/2 cup of coleslaw mix
(I chopped these both in a food processor)
19oz can of chickpeas, haphazardly mashed (I used a potato masher)
1/2 a small lemon
3 tablespoons of vegan mayo
2 tablespoons spicy brown mustard
A good amount of salt and pepper.

Give it a good mix, and you're done! And all of this is basically to taste, so if you feel like any part of it is lacking, you can always add more of whatever. It's super flavorful though, I love it!
