Brown Sugar Glazed Salmon with Roasted Yukon Gold Potatoes & Grilled Broccoli

Ingredients
Brown Sugar Glaze
1 tsp kosher salt
1 tbsp light olive oil
2 tbsp Dijon mustard
½ cup dark brown sugar
1 tbsp fresh lemon juice
Roasted Yukon Gold Potatoes
1 lb Yukon Gold potatoes
¼ cup lemon basil vinaigrette (store-bought)
Kosher salt, to taste
Coarse ground black pepper, to taste
Grilled Broccoli
1 lb broccoli florets
¼ cup olive oil
Kosher salt, to taste
Coarse ground black pepper, to taste
Salmon
4 salmon fillets (6–8 oz each), skin on
¼ cup olive oil
Kosher salt, to taste
Coarse ground black pepper, to taste
Preparation
1. In a small mixing bowl, whisk together the Dijon mustard, olive oil, kosher salt, brown sugar, and lemon juice until well combined. Set aside.
2. In a separate bowl, toss the Yukon Gold potatoes with the lemon basil vinaigrette. Season with kosher salt and black pepper.
3. In another bowl, toss the broccoli florets with olive oil. Season with kosher salt and black pepper.
4. Brush the salmon fillets with olive oil and season both sides with kosher salt and black pepper.
Grilling Instructions
1. Using a Weber Cold Cleaning Brush, clean the grill grates.
2. Preheat the grill for direct cooking over medium-high heat (450–500°F). Place a grill pan on the grill and allow it to preheat for about 15 minutes.
3. Add the seasoned potatoes to the preheated grill pan. Close the lid and cook for 6 minutes.
4. After the potatoes have cooked for 6 minutes, place the salmon fillets skin-side down directly on the grill.
5. Close the lid and grill the salmon for 12–14 minutes, or until it reaches an internal temperature of 135°F at the thickest part.
6. After the salmon has cooked for 6 minutes, add the seasoned broccoli to the grill pan. Grill for 6–8 minutes, or until tender and lightly charred.
7. Once the salmon reaches 135°F, brush it generously with the brown sugar glaze and grill for 1 additional minute to caramelize the glaze.
8. If desired, remove the skin by sliding a spatula between the skin and the flesh. Let the salmon rest for 5 minutes.
9. Remove the potatoes and broccoli from the grill once they are cooked to your liking.
