Gimbal lock can be really easy to get when you aren't paying attention to the values of your rotates. Essentially it means that 1 or more values exceed 360 degrees, so they start working against each other and do some wonky things.

The euler filter can be a lifesaver in these instances. So enjoy my bad sense of humor and USE YOUR GRAPH EDITOR!
