Well that was a long title.
Giga Cardia is a pretty fun boss, it feels like the perfect battle to end the Shovel Knight journey of the last 5 years.
New Game Plus (+) makes this battle a lot more challenging, since it lowers King Knight's health to four, you can't abuse your post-damage invincibility, but you do recover one heart every four hits, which definitely helps.
Of course, if you're having trouble you can always use one of the Troupple King's buffs that lets you recover health mid battle.
Also keep in mind that in New Game Plus, heirlooms cost money, so Giga Cardia can't prevent heirloom usage, I lowered my Gold to 0 just to make sure I couldn't use them.
