Out in the middle of the vast, empty Atlantic Ocean lies an elusive cluster of islands called the Azores. These volcanic islands hissing with smoke and fog are home to rich cultural and culinary traditions, and Anthony is treated to an inside look at both. He begins in São Miguel, an island famous for its bubbling (albeit smelly) geysers. Here he meets with a local geothermal cooking expert who prepares an array of geyser-infused eats. Later, across town, Anthony is shown the true depth of “blowhole power” as a delicious pork is slow-cooked and then enjoyed over a family dinner.
