I woke up the second day and beat him first try. Here is a video of Phantom Ganon being beaten with just a Peahat. This is part of my 100% playthrough only playing Zelda, and only using Peahat to do damage if allowable (some mechanics require bombs, fire, ice, or electric attacks).
