Hi guys, it's JB here! True classic from Brittany, made with just a handful of ingredients, they’re simple but packed with that rich, deep butter flavour that makes them impossible to stop at one (you’ve been warned 😄). Perfect with a cup of tea or coffee, any time of the day. Let’s go! - JB

Galettes Bretonnes
Makes 24
INGREDIENTS:
180g (12 tbsp) salted butter, softened
2/3 cup (130g) caster sugar / superfine sugar
1 large egg yolk
1 tsp vanilla extract
2 cups (300g) plain flour / all-purpose flour
EGG WASH:
1 large egg yolk
1 tsp milk
1.Cream butter for 30 seconds on medium-low speed using an electric beater. Add sugar and keep beating for 1 minute until pale and fluffy.
2.Add egg yolk + vanilla, beat just to combine.
3.Still beating on medium-low, add flour in 3 additions. It will look like wet sand.
4.Bring together by hand into a smooth dough.
5.Wrap and refrigerate for 1 hour.
6.Roll between baking paper / parchment paper to 5mm / 0.2”.
7.Cut 7mm / 2.8” rounds. Transfer to 3 paper lined trays using a spatula. Re-roll scarps and make 24 in total.
8.Brush lightly with egg wash.
9.Decorate, scoring a cross using the back of a fork dipped in water.
10.Bake at 180°C / 350°F (160°C fan) for 14-15 minutes until lightly golden.
11.Rest 5 minutes on tray, then transfer to rack to cool completely. Enjoy!
