Vegetable Fried Rice Recipe:
Yield: Serves 4 as a side dish
Ingredients: 2 tbsp grapeseed or vegetable oil 1 carrot, chopped (heaping ⅓ cup) ½ small yellow onion, chopped (heaping ½ cup) 1/4 cup peas (I used frozen) 1 tsp + 1 tbsp soy sauce 4 cups cooked rice, preferably a day or two old 2 eggs, whisked with 1 tsp soy sauce 4 scallions, sliced 1 tsp sesame oil
Directions: In a very large frying pan or wok, heat 1 tbsp of oil over high heat until it’s almost smoking. Add the carrots, onion, and peas. Toss frequently and cook for 4 minutes. Season with 1 tsp of soy sauce. Remove from the pan.
Add the other tablespoon of oil to the pan and add the rice. Cook for a few minutes, frying the rice and trying to break up any clumps with your spatula. Make a well in the center and add the eggs. Let sit for a minute so big pieces of egg can form, then scramble and break into bits.
Add all the veggies back, then add 1 tbsp soy sauce, the sesame oil, and scallions. Cook for 4 minutes until heated through. Enjoy!

SANTA HAT CUPCAKES RECIPE - Chocolate Cupcakes with Marshmallow Fluff Buttercream
Ingredients: For the chocolate cupcakes: 4 oz all purpose flour (about 3/4 cup) 6 tbsp cocoa powder 1 tsp baking soda 1/2 tsp baking powder 1/2 tsp salt 1 cup sugar 1/2 cup whole buttermilk or almond milk 1/4 cup vegetable oil 1 large egg 1/2 tsp vanilla extract 1/2 cup coffee
For the marshmallow fluff buttercream: 2 sticks unsalted butter, at room temperature 7.5oz jar marshmallow creme or fluff 1 cup confectioner's sugar
For assembly: Cut strawberries sanding sugar, optional
Directions: Preheat oven to 350F. Line a muffin pan with cupcake papers.
To make the cupcakes, whisk to combine the flour, cocoa powder, baking soda, baking powder, salt, and sugar.
In a separate bowl, whisk to combine the buttermilk, vegetable oil, egg, vanilla, and coffee.
Add the wet to the dry and stir until not flour streaks remain.
Portion the batter in the cupcake papers, filling 2/3 to 3/4 up the sides. Bake for 22-24 minutes, until a toothpick inserted into the center comes out clean. Let the cupcakes cool completely.
To make the frosting, whip together the butter, marshmallow creme, and confectioner's sugar for 4 minutes on high speed, until fluffy and light.
Pipe the frosting onto the top of the cupcake, press a strawberry into it, and pipe a ball on top. EGGNOG BREAD PUDDING RECIPE Yield: Serves 6-8
Ingredients: 4 large eggs 4 cups eggnog ½ tsp ground cinnamon 1/2 tsp freshly ground nutmeg 1 tsp vanilla 1/2 cup sugar 6-7 cups day old challah bread, cubed (one loaf)
Directions: Preheat oven to 350F.
In a large bowl, whisk to combine the eggs, eggnog, cinnamon, nutmeg, vanilla, and sugar. Toss with the challah, then let sit for 30 minutes to soak.

PUMPKIN PIE RECIPE Yield: one 9 or 10" pie, serves 6-8
For the graham cracker crust: 1.5 cups graham cracker crumbs (if grinding your own, it’s a little less than 2 sleeves of graham crackers) ¼ cup granulated sugar 6 tbsp unsalted butter, melted
For the pumpkin pie filling: 2 cups pumpkin puree 1 cup heavy cream 1 cup sugar 2 tsp ground cinnamon 1/2 tsp salt 1/4 tsp ground ginger 1/4 tsp ground nutmeg 1/4 tsp ground cloves 2 eggs 2 egg yolks
Directions: Preheat the oven to 350 F.
To make the crust, stir to combine the graham cracker crumbs and sugar. Add the butter and mix until the crumbs are moistened and it looks like wet sand.
Press the graham crackers into a 9 or 10” pie plate using your fingers or a measuring cup, pushing the crumbs up the side of the plate. Bake for 10 minutes until golden and dry to the touch, then let cool while you make the filling.
To make the filling, whisk to combine all the filling ingredients until smooth.
Pour the filling into the graham cracker crust*, and bake for 45-50 minutes, until the pie is set. If you move the pie, it should jiggle but not have a liquidy center. Let the pie cool for at least 2 hours, and I think it’s even better refrigerated. Serve and enjoy!
*Depending on how deep or shallow your pie plate is, you may not use all of the filling. Do not fill higher than the sides of the crust.

CHERRY BERRY LATTICE PIE RECIPE: Yield: one standard pie, serves 6-8
Ingredients: 2 (10-ounce) bags frozen cherries (4 cups) 1.5 cups frozen blueberries 1 cup frozen raspberries 6 tbsp cornstarch 1 cup granulated sugar 1 tbsp fresh lemon juice 1 beaten egg for egg wash, optional Two 9” pie crusts
Directions: In a bowl combine the cherries, blueberries, raspberries, cornstarch, granulated sugar, and lemon juice, until fully mixed and the cornstarch has moistened.
Fit a 9” pie plate with a pie crust on the bottom, then pour in the fruit filling. Top the pie with a lattice crust (see video for visual instructions) and cut off any excess pie strips overhanging the edge. Refrigerate the pie for 30 minutes to re-chill the dough.
Preheat oven to 400F. Brush the crust with beaten egg, if desired.
Bake the pie for about 1 hour until the crust is golden brown and the filling is bubbling. Serve and enjoy!
----- FREE FORM APPLE TART RECIPE (Apple Galette) Yield: One standard tart, serves 6-8
Ingredients: 4 Golden Delicious apples (about 2 lbs) 1/3 cup brown sugar 1/2 tsp ground cinnamon 1/4 tsp grated fresh nutmeg 2 tsp cornstarch One standard pie crust, homemade or storebought 2 tablespoons unsalted butter, cut into small pieces 1 beaten egg for egg wash, optional
Directions: Peel the apples, core them, and cut into thin slices about ¼” thick. Place in a bowl and toss with the brown sugar, cinnamon, nutmeg, and cornstarch.
Roll the pie crust into an 11” diameter circle, then arrange the apple slices on the crust, leaving an inch and a half border at the edge. Fold the crust edge over the apples, then refrigerate for 30 minutes to re-chill the dough.
Preheat the oven to 400F. Brush the crust with the egg wash, if desired.
Bake the tart on a sheet pan for 30-35 minutes until the crust is golden and the apples are tender. Serve and enjoy!

PUMPKIN PIE PEANUT BUTTER CUPS RECIPE
Ingredients: ¼ cup pumpkin puree (fresh or canned) ¼ cup creamy peanut butter 1 tbsp pure maple syrup ¼ tsp ground cinnamon ⅛ tsp ground ginger 1/16 tsp ground allspice 1/16 tsp ground cloves A few grates of nutmeg or 1/16 tsp ground nutmeg 1 cup semisweet chocolate chips 2 tbsp grapeseed oil or other neutral oil
Directions: In a bowl, stir to combine the pumpkin, peanut butter, maple syrup, cinnamon, ginger, allspice, cloves, and nutmeg.
Combine the chocolate and grapeseed oil in a microwave safe bowl, then microwave in 30 second intervals until melted, stirring after each interval (it should be about 3 intervals).
Line a 12-cup muffin tin with cupcake liners, then add a couple teaspoons of melted chocolate to each cup. Freeze for 10 minutes, then add a couple teaspoons of the pumpkin peanut butter mixture. Freeze for 10 minutes. Then add chocolate to cover the pumpkin layer, give it a shake, and freeze for 10 more minutes. Then it's ready to eat and enjoy!

Caramel Apple Rose Tart Recipe: Yield: One 11" tart
Ingredients:
For the crust: 1¾ cups all purpose flour ¼ cup sugar ¼ teaspoon salt 12 tablespoons unsalted butter, melted
For the apples: 5 large apples (I used gala but most apple types can be used) 1 lemon 1 cup caramel sauce (I used homemade from this video) vanilla ice cream, for serving, optional
Directions: Preheat the oven to 350F.
To make the crust, whisk to combine the flour, sugar, and salt. Mix in the melted butter until the flour is moistened and the dough is crumbly.
Press the dough evenly into an 11" tart pan with a removable bottom (a 9 or 10" tart pan is also okay). The crust will be thin. Bake for 20 minutes until slightly golden and no longer raw.
For the apples, cut each one in half and remove the seeds with a melon baller (or use an apple corer). Slice the apple thinly with a mandolin or using a knife, then place into a bowl of water with the juice of 1 lemon, to keep the apple from browning.
When all the apples are prepped, drain the lemon water and cover the apples with boiling water. Leave for 10 minutes, until the apples are cooked and flexible.
Pour 1/4 cup of the caramel sauce into the bottom of the crust. Shape the apples into roses per the instructions in the video, then place into the tart. Pour over the remaining 3/4 cup of caramel sauce, then bake for 35-40 minutes in the 350F oven. Chinese Chicken Salad Recipe
Ingredients: For the dressing: ¼ cup grapeseed oil 2 tbsp rice vinegar 2 tbsp honey 2 tbsp peanut butter 1 tbsp dijon mustard 1 tsp sesame oil ¼ tsp Chinese five spice ¼ tsp salt ½ tsp grated ginger 1 tsp grated garlic
For the salad: 1 tbsp grapeseed oil 1 chicken breast, sliced through the middle (or two chicken cutlets) salt Chinese five spice, for dusting the chicken 4 scallions, sliced (1/2 cup) 1 small head Napa cabbage (6 cups) 1 small head romaine (4 cups) 3 medium shredded carrots (1 cup) ½ cup chopped mint leaves ½ cup salted, roasted peanuts 1 can mandarin oranges, for garnish, optional
Directions:
To make the dressing, whisk together all ingredients until combined.
Heat a nonstick skillet over medium heat. Add the oil. Season both sides of the chicken with salt and Chinese five spice, then cook the chicken for about 4 minutes on each side until completely cooked through. Let the chicken cool, then shred with two forks or with your fingers.
Add the chicken to the dressing, as well as the scallions, napa cabbage, romaine, carrots, mint, and peanuts. Toss well. Then add the oranges, if desired. Directions: Preheat the oven to 175 degrees F.
Puree the chopped fruit and citrus juice, if using, in a food processor until smooth, scraping down the sides as needed. Taste the mixture and determine if you'd like to sweeten it with honey or sugar, and mix it in if you do use it.
Pour the puree onto a silicone mat lined baking sheet and smooth it out with a spatula, then shake the pan to flatten evenly. Place the sheet pan in the oven for 2-3 hours, until the fruit rollup sheet is dehydrated enough that it is dry to the touch. The cook time may take longer if you're using a high-moisture fruit.
Remove the fruit rollup sheet to a cutting board and cut into long strips, then roll them up. Enjoy!

Ingredients 1 tablespoon extra-virgin olive oil, plus more for serving ½ lb andouille pork sausage, sliced (don’t substitute with chicken sausage) 1 small yellow onion, chopped 1 clove garlic, minced 1 bunch spinach, washed 14oz small cherry or grape tomatoes 12 ounces pasta (I like bowties) 4 cups chicken stock salt
Directions: Heat the olive oil in a nonstick skillet set over medium heat and add the sliced andouille sausage. Cook for about 5 minutes until brown.
Add the onion and garlic, season with a pinch of salt, and cook for 4-5 minutes until softened.
Add the spinach, tomatoes, pasta, and chicken stock, and cook, stirring frequently, at a low boil for about 10 minutes, until the pasta is al dente and the liquid has been absorbed. Serve and enjoy!

Coffee Cake Doughnuts Recipe Yield: Makes 6 doughnuts, but you can scale this recipe up as needed
Ingredients:
For the Streusel: 1/2 cup all-purpose flour 1/4 cup sugar ⅛ tsp salt 1/4 teaspoon ground cinnamon 4 tbsp unsalted butter, melted
For the doughnuts: ¾ cup all purpose flour ⅓ cup sugar 1/4 tsp baking soda 1/4 tsp salt 1/3 cup grapeseed oil (can also use canola) 1/4 cup milk (I use Skim) 1 large egg 1 tsp vanilla extract
For the glaze: ½ cup confectioner’s sugar 2 tsp water
Directions: For the streusel, whisk to combine the flour, sugar, salt, and cinnamon. Stir in the butter with a fork, then refrigerate while you make the rest of the recipe. For the doughnuts, whisk to combine the flour, sugar, baking soda, and salt. Set aside. In another bowl, whisk to combine the grapeseed oil, milk, egg, and vanilla extract. Add this liquid to the dry ingredients and whisk until the two are combined. It’s okay if the batter is lumpy, as you don’t want to overstir. Evenly divide the batter into the six donut wells, which is about 2.5 tbsp per well. Bake for 15 minutes until a toothpick inserted into one of the donuts comes out clean. Flip the doughnuts out, then let them cool. Mix the glaze ingredients together, then drizzle on top of the cooled doughnuts. Strawberry Italian Cream Soda Recipe
Yield: Makes 8-10 sodas
Ingredients:
For the strawberry simple syrup: 1.5 cups diced strawberries (from about 10 strawberries) 1 cup water 1 cup sugar
For the cream sodas: ice 2 liter bottle seltzer water 1 pint half and half Strawberries, for garnish, optional
Direction: To make the strawberry simple syrup, place the strawberries, water, and sugar in a saucepan. Bring to a gentle simmer over medium high heat and cook for about 20 minutes, mashing the strawberries with a spoon as they soften. Do not let the mixture boil, or you will lose too much moisture.
By the end of the 20 minutes, the simple syrup should have a red color, and lthe strawberries should be really soft. Remove the pan from the heat and strain through a sieve. Let the syrup cool to room temperature, then refrigerate until cold.
Side note: you can save the strawberries that were strained out for your yogurt. It makes for a great stir-in.
To assemble the cream soda, put a few cubes of ice into a glass. Pour seltzer about ⅔ of the way up, then add a couple tablespoons of the strawberry simple syrup, as well as a couple tablespoons of half and half. Garnish the glass with a strawberry if desired, and stir the drink to mix all the ingredients. Taste it and add more simple syrup if you want more sweetness, or more half and half if you want more creaminess. Frozen Hot Chocolate Recipe
Serves 1-2, but you can make as many as you want
Ingredients: 2 ounces bittersweet chocolate chips (a heaping ¼ cup, measured) 2 tablespoons unsweetened cocoa powder ¼ cup dry milk powder 2 tablespoons granulated sugar 1 cup cold milk, whole is ideal here 2 cups ice whipped cream, optional, for garnish chocolate shavings, optional, for garnish
Directions: Melt the chocolate in the microwave in 30 second intervals, until fully melted. Place the chocolate and the rest of the ingredients in a blender, and blend for about 30 seconds until smooth. Serve with the whipped cream on top and chocolate shavings, if desired. Easy Rice Pudding Recipe: Serves 3-4
Ingredients: 1/2 cup long-grain white rice ⅓ cup sugar ¼ tsp salt 3.5 cups whole milk 2 tsp vanilla paste ¼ cup heavy cream
Directions: Place rice in a nonstick pan, and add the sugar, salt, and milk. Give that a stir and bring to a simmer over medium heat, then reduce to medium low and cook for 35 minutes until the rice is soft and the liquid has cooked down a lot. Make sure it never comes to a full rolling boil, and stir every five minutes.
Turn the heat off and add the vanilla paste and heavy cream.
Chill the rice pudding for at least 4 hours, then the rice pudding can be served. Enjoy!
