F-Zero AX Monster Ride was a version of the game that ran on a gigantic simulator machine called Cycraft, which was developed cooperatively between Sega and Simuline. The machine looks like it's suspended in the air and makes use of three servo motors for movement (you see a purple image of it in the game after crediting up and pressing start)
There seems to be a few minor differences to the 'regular' version of AX apart from the "Monster Ride" addition to the title: You can choose what appears to be all the GC machines on top of the GX ones. Looks like there's no GC memory card support and there's no license making option or Time Attack mode. Looks like there's an additional mode called 'Destroyer'. Also, the game was playing in a weird view (I don't know if this was something I could've changed myself with the regular view change, the button config's a bit odd). I was actually finding it a bit harder playing it in this weird slightly zoomed in way, which is why I was missing a lot of the boost plates and such.
Apparently, this is an ultrarare version of the game, I've certainly never seen one before.
