All you need to do is wait for a chao to walk up to a fruit, about to eat it. Pick up the fruit the same time as the chao does and it'll eat air for a while (after a while, it just stops.). When you drop the fruit you're holding, it'll go flying back to the chao. (The fruit doesn't 'exist' until the chao has it again, meaning other chao can't take it.)
