Johannesburg is a city of contrasts — wealth and hardship, tradition and modern finance, ancient fire and contemporary cuisine. In Part 1, David Moscow begins at Marble, Chef David Higgs’ iconic restaurant that cooks exclusively over open flame — a tribute to South Africa’s deep-rooted braai culture and humanity’s earliest relationship with fire.

But this episode quickly becomes something far more personal. After learning that some of the earliest confirmed evidence of controlled fire comes from just outside Johannesburg, David sets out to source his ingredients the old way: harvesting sorghum in the bush, learning to make traditional sorghum beer, and ultimately stepping into the wild to hunt his own meat.

What begins as a culinary mission evolves into a moral reckoning. As David confronts the act of hunting — and the weight of taking an animal’s life — he begins to question the distance modern diners often feel from their food.
