With this crazy "Polar Vortex," I've even had to turn off the A/C here in Florida, and **gasp* run the heat. It was a good enough excuse to make a pot of chili, and the proper companion was a batch of Hushpuppies. Between them, they will nicely warm all of your parts that need warming.
The chili was invented on the fly, roughly based on a recipe Larry Wolfe did a while back. Recipe is in the video. I'll try to extract it and type it up here later.
The hushpuppies are a recipe I ran into online, a year or more ago. It's become my "go to." Best hushpuppy recipe I've found yet.
Ingredients:
2 cups Corn meal
2 TBS Flour
2 tsp Baking powder
1 TBS Sugar
2 tsp Salt
1/4 cup Finely chopped onion (or dried minced onion)
Pepper to taste
Boiling water (2 cups, or as needed)
1 Egg, beaten
1/4 cup Milk
Combine dry ingredients except baking powder. Add boiling water to make a "mush." Add remaining ingredients. Drop into 375° oil and fry until golden.
