Cooking Sections is a London-based duo working across art, architecture and ecology to expose how food systems shape environments and economies. For Folkestone Triennial 2025: How Lies the Land?, they present The Ministry of Sewers—a participatory artwork inside Folkestone’s old Customs House. Reclaiming the original meaning of “sewer” as a life-giving water channel, the piece invites the public to share experiences of coastal pollution. Through a growing archive of complaints, testimonies and evidence, Cooking Sections activate a new kind of public service—one that listens, documents, and imagines cleaner, more equitable relationships with water and the sea.
