Some of my tastiest fish recipes have involved sandwiches. Well I stumbled on a fish sandwich recipe that looks delicious. There’s only one thing I need for this dish. It’s the fish! Click on SHOW MORE for info on the tackle, lake, recipes and much more.

THE BOAT: Bass Hunter EX purchased March, 2018. It can be ordered here: basshunter.com/bass-hunter-ex.html.

THE MOTOR: Minn Kota Endura C2-55 Trolling Motor (36" Shaft), 55 LBS of thrust. It runs on a 12v, deep cycle battery. Purchased on amazon, September, 2018.

THE LURE: a 2½ inch Shad Grubs from Action Plastics (currently out of business, but its website indicates it may be reopened).

THE SPINNING REEL: A black and red Abu Garcia REVO2SX10, purchased 04/26/2018.

THE SPINNING RODS: Daiwa SMD401ULFS Spinmatic-D SpinRod (4- Feet, Ultra Light, 1 Piece, 1-4 pound line test recommended). It can be found on Fish USA, and other places.

THE SPINNING REEL LINE is SpiderWire, Ultracast, Invisi-Braid in 10 LB test, 2 LB monofilament equivalent.

THE 2nd LURE: a ¼ ounce black buzzbait with silver blade. Unknown brand.

THE BAITCASTING REEL is a Shimano Calcutta 50B, from 2004. This model is no longer made.

THE BAITCASTING LINE is Firewire Stealth Braid in moss green, 15 LB test, 4 LB mono equivalent.

THE BAITCASTING ROD is a Shimano Compre, Model CPC66ME, 6’ 6” fast action, med. power. Lure weight 1/4 - 5/8 oz. ounce. Line weight 8 - 15 pound test. Purchased August 2018.

THE LAKE is called Lake Ketchabigwon (named by native Americans). It is almost 6 acres and is located in NE Ohio. It sits on 37 acres of property. The lake is private. It has a maximum depth of 12 feet. The small pond is ¾ acre with a maximum depth of 12 feet.

FISH IN THE LAKE are largemouth bass, bluegill, white crappie, black crappie, yellow perch, channel catfish, and grass carp.

WHY KEEP SMALL BASS AND RETURN LARGER BASS: We had biologists perform an electroshock survey of the lake. They found too many small, stunted bass. There is only so much biomass to go around, and there are too many mouths to feed. Their advice was to remove all bass under 12 inches, and to release the bigger ones. This rule is usually the opposite in large public lakes.

VIDEOGRAPHY:
The principal camera is my iPhone X on a tripod. I also use an iPhone 6s Plus as a close-up, counter-top camera when cooking. It is mounted on a small tripod. I use a Rhode microphone indoors to help lessen the echo. The video is edited on my MacBook Pro using Final Cut Pro X.

FISH REUBEN SANDWICHES ON RYE

The recipe was inspired by the one found here: pillsbury.com/recipes/fish-reuben-sandwiches/587d1e5c-9102-41ea-9291-d618e5ee9472

INGREDIENTS:
6 oz heavy cream plus 2 oz. water (or use 8 oz. milk)
1 cup of low-carb bread crumbs
½ cup or more of almond flour
1 LB white fish fillets (such as bluegill, bass, catfish or tilapia)
7 tablespoons of oil for extra large electric skillet (3 in regular large skillet)
4 tablespoons butter, softened
8 slices low-carb rye bread* for four sandwiches
4 (1-oz.) slices Swiss cheese
¾ cup sauerkraut
½ cup thousand Island salad dressing

DIRECTIONS:

Place cream and water in shallow bowl; place bread crumbs, almond flour, and seasoned salt in a casserole dish and stir well. Dip fish fillets in cream mixture; coat with bread crumbs mixture.
Heat oil in large nonstick skillet over medium-high heat until hot. Add fish; cook 2 minutes on each side or longer, until fish flakes easily with fork. Remove fish from skillet; place on plate. Drain and discard oil from skillet.
Spread butter on one side of each slice of bread; place 4 slices, buttered side down, on work surface. Top each with slice of Swiss and fish fillet. Top each with sauerkraut, salad dressing, and one more slice of Swiss. Cover with remaining slices of bread, buttered side up.
Heat the same large nonstick skillet over medium-low heat. Add sandwiches; cook 6 to 8 minutes or until bread is golden brown and cheese is melted, turning once.
