Meatloaf:
2 eggs, beaten
2/3 cup milk
3 Slices Bread, crumbled (about 150 grams)
1/2 cup cheddar cheese shredded (about 3 ounces)
1 medium onion, chopped
1/2 cup finely shredded carrot
1 teaspoon salt
1/4 teaspoon pepper
1 &1/2 pounds ground beef
Bake at 350 degrees for 60- 75 minutes
Lasagna (Double batch) Makes 2 9x13 pans
18- 24 uncooked lasagna noodles
1 pound ground beef
1 pound italian sausage
6 garlic cloves, crushed
2 quarts tomato juice
2 pints tomato sauce
2 tablespoons brown sugar
1 tablespoon fresh oregano, chopped
1 tablespoon fresh basil, chopped
2 1/2 teaspoons salt
1 teaspoon pepper (I used homemade cayenne but black pepper is good too)
Cheese
32 ounces ricotta
2 eggs
1 tablespoon chopped mild greens from garden
1 cup parmesan cheese
4 cups mozzarella cheese
Assemble tomato ingredients, then cheese ingredients. Layer noodles, tomato sauce, then cheese. Repeat. Bake covered 325ºF for 45 minutes, remove cover and bake another 15 minutes. If frozen, thaw in the refrigerator before baking.
