RECIPES!
Tortillas:
7 cups flour
1 cup lard
2 1/2 cups warm water
5 tsp baking powder
1 1/2 tsp salt
Mix ingredients and form into balls. Cover and let rise 1/2 hour (heat tortilla press (if using) during the last 15 mins). Press each ball and fry.
Enchilada Sauce:
1 T avocado oil
3 cloves garlic
1 tsp minced
1/2 oregano
2 1/2 tsp chili powder
1/2 tsp dried basil
1/8 tsp pepper
1/4 tsp salt
1 tsp parsley
1/2 cup salsa
1 (6oz) can tomato sauce
1 1/2 cups water
Heat the oil in a large skillet over medium heat. Add garlic and saute. Add onion, oregano, chili powder, basil, pepper, salt, parsley, salsa, and tomato sauce. Mix together, then stir in water. Bring to a boil. Bring to a boil, reduce and simmer for 15-20 mins or until slightly thickened.
Sourdough Chocolate Surprise Cupcakes:
2 cups all-purpose flour
2/3 cup cocoa
1 2/3 cup maple syrup
1 T baking powder
1/2 tsp salt
1 cup sourdough starter (bubbly or discard)
1/2 cup avocado oil
3 eggs
1 cup fresh brewed coffee
3 tsp vanilla
For cream cheese filling, combine:
8 oz cream cheese, softened
1 egg
1/3 cup sugar
1 cup chocolate chips
Mix together all the dry ingredients. Stir until well combined. Mix wet ingredients, then stir into dry ingredients. Pour coffee over the cake batter. Stir until fully combined (batter will be thin).
Ferment in fridge overnight (for sourdough benefits). The next morning, divide into muffin tins (filling 3/4 of the cup. Then drop 1 spoonful of cream cheese mixture in the center of each cupcake and bake .

2 tsp baking powder
1 tsp baking soda
2 T maple syrup
1 tsp salt
1 cup sourdoug starter
1 1/2 cups buttermilk
2 eggs
2 T avocado oil
Whisk together all ingredients. Cook in waffle iron.
