Falafel: Make 10-12 Fritters
1 Cup Chick Peas, drained completely
1 small Onion, minced
2 Tbs Parsley, minced
2 Tbs Cilantro, minced
2 cloves Garlic, minced
1 tsp Cumin
1 tsp Baking Powder
1 Cup of Flour
1 Pita Bread per person
2-3 cups of Canola Oil
½ tsp Salt /Pepper
Tzatziki Inspired Cucumber Cream Sauce
¼ cup of Diced Cucumber
¼ cup of Sour Cream
2 tbsp. of Tahini paste
2 tbsp. lemon juice
½ ts of Salt / Pepper
Directions
1. Place the can chick peas in bowl and drain off liquid
2. Place the chick peas and onion in the bowl of a food processor add 2 tbsp.
parsley, 2 tbsp. cilantro, 2 garlic cloves, 1 tsp. of cumin, 1 tsp of baking powder and pulse until fully incorporated.. Do not puree mixture, just combine until a wet grainy sandy “dough” forms. Place in bowl, cover and refrigerate for at least 2 hours.
4. Form mixture into balls using a falafel scoop or spoon.
5. In a deep pot heat 3 inches of oil to 375 degrees and fry to test 1 ball. If ball
breaks apart add a little flour to mixture.
6. Fry for about 3-5 minutes, depending on size, or until golden brown. Place on paper towel to drain the oil.
7. Cut Pita bread into small triangles and serve with a Tzatziki inspired Sauce
To make the Tzatziki Sauce, combine all the ingredients together.
