In this video, I demonstrate how burnt out electric bike motors, may still be salvageable, and turned into homemade electricity.. I don't know the power output limits from these motors, but considering they are build to handle high currents as motors, I'd guess most of them can produce a few hundred watts without burning out the motor windings, and they don't require high RPMs to produce useable electricity to charge batteries, or power many other devices.
Because there were several wires coming out of my motor, I ran a few tests to determine which wires would be the best outputs, but as a general rule, I would assume it's mostly likely to be the thickest wires, as they are designed to handle the most current.
