This episode of RiskyRoadz To The World Cup: we’re heading to Egypt.
After so many savoury dishes, it was time for something sweet… and what better choice than Umm Ali, Egypt’s most famous dessert.
And it tasted even sweeter after Egypt’s historic World Cup win over New Zealand — their first World Cup victory in 92 years.

🍮 UMM ALI (EGYPTIAN BREAD PUDDING)
Serves 4–6
INGREDIENTS
For the rokak:
• 300g plain flour
• ½ tsp salt
• 180ml warm water
For the Umm Ali:
• 4 sheets homemade rokak, cooked and torn into pieces
• 750ml whole milk
• 200ml double cream
• 150ml condensed milk
• 75g raisins
• 75g pistachios, chopped
• 75g almonds, chopped
• 50g desiccated coconut
• 1 tsp vanilla extract
METHOD
1. Mix the flour, salt and warm water into a dough. Knead for 5–10 minutes until smooth, then rest for 30 minutes.
2. Divide into 4 balls and roll each one as thin as possible. Cook in a dry frying pan for 30–60 seconds per side to create the rokak.
3. Tear the rokak into a baking dish and scatter over the raisins, pistachios, almonds and coconut.
4. Heat the milk, cream, condensed milk and vanilla until hot but not boiling.
5. Pour over the pastry and leave for 5 minutes to absorb.
6. Bake at 200°C for 20 minutes.
7. Finish under the grill for 2–3 minutes until golden and crisp.
8. Serve warm and enjoy.
