Most eels eaten in the United States are caught as babies in America and shipped to China—where there is little regulation and the industry is rife with smugglers and corruption. In fact, it is nearly impossible to track where the eels served at restaurants came from and how they were raised. No wonder all three major species of eels commonly consumed by people are endangered!
