When I first designed the bevel guide I was doing flat grinding edge up. Then I decided to flip the blank edge down. I have not ground blanks edge up for a long time. I did it in the video because many people have asked if the guide could do it. This is a demonstration to show that the guide can do it. For me edge up takes too long and does not produce as accurate of a bevel as when I grind edge down.
