Hello and welcome back!
Today we are making a takeout staple chicken chow Mein and while you might think this Is complicated, I say nay! all you have to do is marinate the chicken, mix the sauce, and par-cook the noodles before you start the final cooking process and you will be done in under 1 hour.
First up the chicken
1-2 pounds of boneless chicken breast (use boneless thighs for a more traditional meal)
-Slice chicken into strips, keep the pieces the same size so they all finish cooking at the same time
-mix with 2 tablespoons of regular soy sauce, 1 tablespoon of cornstarch, and a splash of water mix to combine and set aside.
Noodles
-boil the chow mein noodles of your choice for only 45 seconds and drain and leave in the colander.
-right before cooking starts give noodles a rinse and break them apart with your hand so you don't drop a brick of noodles into the pan.
(I used 2 6 ounce packages of wel-pac brand chow mein stir-fry noodles)
for the sauce combine In a bowl
-2 tablespoons of soy sauce
-1 tablespoon of dark soy sauce
-3 tablespoons of oyster sauce
-2 tablespoons of Shaoxing wine
-2 teaspoons of sesame oil
-1 teaspoon of white sugar
-2 teaspoons of cornstarch
-4 thin-sliced garlic cloves
-1 half cup of chicken stock
-1 tablespoon of white pepper
mix and set aside.
Mixins
-2 cups of cabbage thin sliced
-1 cup chopped celery
-1 cup of carrots cut into sticks
-2 green onions cut into 1-inch pieces
-1 cup of mung bean sprouts rinsed and drained
you are ready to cook when you have...
the chicken marinating
the sauce is mixed
the noodles are preboiled
the mixins are cut, portioned, and cleaned
Cooking
1 - heat oil in a deep pan or wok on medium or medium-high heat and add chicken onto even layer of the pan and let cook for 1-2 minutes
2 - once all chicken has white around the outside flip all pieces over so no pink sides are facing up and cook for another 30-60 seconds max
Do not fully cook the chicken!
3 - add in celery, carrots, and cabbage and cook until everything Is soft about 2 minutes
4 - add in noodles and stir to break apart immediately add the sauce and continue to mix on the heat for another minute once the noodles are coated and darken a little bit
5 - add super optional hoisin or gochujang for an extra kick
6 - add in scallions and bean sprouts mix and after 30 seconds take off the heat and serve
