The Best Homemade Sloppy Joes For One
• 0.5 tablespoon butter or olive oil
• ▢0.25 large yellow onion finely chopped
• ▢0.25 cup green bell pepper finely diced
• ▢2 cloves garlic minced
• ▢0.5 pound lean ground beef 85%-90% lean
• ▢0.5 tbsp Worcestershire sauce
• ▢0.38 cup ketchup
• ▢0.33 cup water
• ▢0.5 tablespoon brown sugar adjust to your taste
• ▢1 tsp yellow mustard
• ▢0.25 tsp chili powder or more to taste
• ▢0.25 teaspoon salt
• ▢0.13 teaspoon black pepper
• ▢2 hamburger buns toasted if desired

o In a large skillet over medium-high heat, melt the butter (or heat the olive oil). Add the finely chopped onion and sauté for 2-3 minutes, until it starts to soften.
o Add the finely diced green bell pepper and cook for another 2 minutes, until softened.
o Stir in the minced garlic and cook for about 30 seconds, until fragrant.
o Add the ground beef to the skillet. Break it apart with a spatula and cook for about 5 minutes, or until it’s no longer pink.
o Stir in the ketchup, Worcestershire sauce, water, brown sugar, mustard, chili powder, salt, and pepper.
o Reduce the heat to medium and let the mixture simmer for about 10 minutes, stirring occasionally. This will allow the sauce to thicken and the flavors to meld together.
o Once the sauce has thickened to your liking, remove it from the heat.
o Serve the sloppy joe mixture on toasted hamburger buns.


Cheesy Taco Pasta (2 Servings)
Ingredients
• 3.2 oz Rotini
• 0.4 pound Ground beef
• 0.2 cup water
• 0.4 oz Taco seasoning
• 0.6 cups Salsa
• 0.8 cups Shredded mexican cheese (divided)
Instructions
1. Prepare rotini pasta to package directions. Drain and set aside.
2. In a large pot cook and crumble ground beef until fully cooked. Drain fat as need.
3. Add taco seasoning and water to the cooked ground beef. Mix together and cook until water is gone.
4. Add cooked pasta to pot with cooked and seasoned ground beef along with salsa and mix well.
5. Add 1 1/2 cup cheese to pot and mix until melted. Remove pot from heat and add remaining cheese to the top and allow to melt. Serve and enjoy!
