Let's gather a few things from the garden for a delicious and healthy soup! All of these ingredients are easy to find at your grocery store too! This soup is not only easy to make, but it comes in at around 200 to 250 calories, with 14 grams of high quality egg protein, about 10 grams of fat (if you omit the cream), low carb, very hydrating, and is loaded with lutein for eye health.

Tips -
- Please follow the instructions in the video and be sure to kill the heat before adding the egg or you'll end up with tough, rubbery eggs. However, make sure the broth is piping hot and immediately add your egg. It is best to use room temperature eggs and not fresh out of the fridge or they might not set up right. Make sure the egg has set up before gently running your fork through the egg, this should only be about 2 minutes..
- This is not a make ahead and reheat soup. However, you can make the broth ahead, with the scallions and flavorings, then reheat the broth and add fresh eggs. This would be a super easy shortcut and only take about 5 minutes to prepare!
- If you like a more "brothy" soup, add one egg instead of two.
- Adjust the calories by omitting the cream and adding less cornstarch.
- Please taste as you cook for salt. All chicken stocks are seasoned differently, and therefore, you may over-salt or under-salt if you are not careful. This soup definitely needs salt because of the eggs, so make sure to taste because under-salting is awful. ..
- You can make this with many shortcuts by omitting the corn starch ( but soup will be thinner), white pepper and ginger. However, adding the teriyaki is the "secret" tip I feel must be included. As noted in the video, teriyaki contains all of the flavorings essential for a wonderful ED soup such as soy sauce, ginger, garlic, and sugar or honey. Also, not noted in the video, but I sometimes add a few drops of toasted sesame seed oil at the very end before transferring it to my soup mug. I use only a few drops because it is very strong, but does add a wonderful flavor, so add it if you have it on hand.

Egg Drop Soup
2 Cups Chicken Stock
2 Eggs
1 Teaspoon Heavy Cream (optional)
2 Teaspoons Cornstarch + 2 tsp. water
1 Scallion, white part and a little of the green,
root end removed and discarded
2 Teaspoons Teriyaki Sauce
2 Teaspoons Fresh Grated Ginger
Couple Drops Fresh Lemon Juice
Smidgen Ground White Pepper
Salt To Taste

Optional
Fresh torn spinach leaves, stems removed
Dill Leaves
Few drops of toasted sesame seed oil
