Ingredients
Chicken (curry cut) – 1 kg
Salt – 1 tsp (or to taste)
Lemon juice – 1 tsp
Garlic paste – 1 tbsp
Ginger paste – 1 tbsp
Red chili powder – 1 tsp
Kashmiri red chili powder – 1 tsp
Coriander powder – 1 tsp
Cumin powder – ½ tsp
Garam masala – 1 tsp
Black pepper – ½ tsp
Plain yogurt (beaten) – 2 tbsp
Butter (melted) – 2 tbsp
Fried onions – ¾ cup (keep 2 tbsp aside for garnish)
Cooking oil – 2 tbsp (preferably the same oil used for frying onions)
Turmeric powder – ½ tsp
Ketchup – 1 ½ tsp
Hot water – 1 cup
Milk powder – 1 tbsp
Kasuri methi – 1 tsp
Fresh coriander (chopped) – 1 tbsp
Instructions
Marinate the chicken:
In a large bowl, add chicken, salt, lemon juice, garlic paste, ginger paste, red chili, Kashmiri red chili, coriander, cumin, garam masala, black pepper, yogurt, melted butter, and fried onions. Mix well until everything is coated. Let it marinate for at least 10 minutes (longer is even better).
Cook the chicken:
Heat oil in a pan (use onion-fried oil if possible). Add the marinated chicken. Sprinkle in turmeric powder and sauté on medium heat for about 5 minutes.
Simmer:
Stir in ketchup, then add 1 cup of hot water. Mix well, cover, and cook on low heat for about 25 minutes, stirring occasionally until chicken is tender and the gravy thickens.
Finish:
Add milk powder, kasuri methi, 2 tbsp fried onions, and chopped coriander. Mix gently, cover again, and cook on very low heat for another 5 minutes.
Serve:
Enjoy your easy butter chicken roast with pulao, porota, or roti.
