RECIPE
Sheet Pan Balsamic Chicken and Veggies
Prep time: 10 minutes
Cook time: 35 minutes
Servings: 5
INGREDIENTS
1/2 cup balsamic vinaigrette, divided
2 lb chicken breast tenders
2 cups broccoli florets
1 cup baby bella mushrooms
2 sweet potatoes, diced
2 tbsp SR MCT Oil
1 cup heirloom cherry tomatoes
METHOD
Place chicken breasts and 1/4 cup of balsamic vinaigrette in a resealable bag. Lay bag flat in the refrigerator and let chicken marinate for at least 30 minutes.
Preheat oven to 400 F. Toss broccoli, mushrooms and sweet potato in MCT oil and remaining vinaigrette. Spread chicken breast and vegetable mix evenly on the baking sheet. Bake for 10 minutes. Add the tomatoes to the baking sheet. Bake for another 15 minutes or until the chicken is cooked through and sweet potatoes are tender.
