The flavour of these baked potatoes is based on the classic dish of welsh rarebit - a cheesy mustard topped grilled bread. The cheese and mustard meld well with baked potatoes with their crunchy exterior and soft fluffy insides. If you like things a like more spicy, you can use a hot english mustard, and if you want them a little less spicy, try a dijon mustard. Finish them with chopped parsley, chives or thinly sliced green onions for a touch of colour and invite diners to savour every delightful bite!
