Mrs. Wawhiker cooks-up her recipe for Dutch Oven Campfire Chops and Stuffing while camping out in our Pop-up Tent Trailer over the 4th of July. (It was Cooper's first overnight in the pop-up).
Recipe for Dutch Oven Campfire Chops and Stuffing
3 thick sliced pork chops
2 sliced onions
5 cups - bread stuffing (the way you like it)
2 cups - chicken broth
2 cups - sliced mushrooms
4 tbs - olive oil
2 tbs - seasoning salt
2 tbs - butter
1 can cream of mushroom soup (or 1 can cream of chicken soup)
Melt butter in dutch oven and sear pork chops on both sides then remove. Add onions. Return pork chops on top of onions. Add olive oil. Sprinkle with seasoning salt. Add coals (approx. 12) to lid of dutch oven. Add chicken broth. Cook chops until done (no longer pink). Remove chops once again. Add sliced mushrooms and cream of mushroom soup. Add more chicken broth if needed to maintain gravy thickness. Return chops to DO. Continue to cook until mushrooms are tender. Add stuffing. Transfer most of the bottom coals to the top of the DO. Bake stuffing until done. Serve and enjoy!!!
