Dulcinea Chocolate. There’s a beautiful softness to the quality of their two ingredient chocolate. No hard edges or excessive bitter notes. Softness, but not so soft that there aren’t interesting aspects. In the Guatemala bar I get a slight sour fruity note, then mellow malty, finishing with a slight bit of tannin. Both the chocolate and the packaging are very well executed. The site mentions a wind powered kitchen? I’d like to see that someday.
