Tip:
Try this, grab the katana and press L2+R2 (to parry WA) then go to the menu and wait to the menu unlocks, and in that moment swap the weapon AND before to get out the menu hold L2 and then get out (with the L2 pressed) and press R1 , then if you do it correctly you can chain the movement, like pressing again L2+R2 and then L2+R1.
