This short recipe video shows a fun and easy way to consume salmon roe. Salmon roe contains between 40-70% of the omega-3 fatty acid DHA in phospholipid form compared to just 1-3% found in fish, making it a somewhat unique source for a type of omega-3 that biology might suggest may have a unique role: for example, humans and some animals have a transporter specialized for the phospholipid form of DHA called the Mfsd2a transporter.

In animals, if the transporter is deleted more than 60% of their brain's DHA is depleted. Humans that have a mutation in the gene that encodes for this transporter also have been shown to end up having early neurodegeneration.

Salmon roe is also high in astaxanthin which is responsible for the pink color and has been shown in human studies to reduce biomarkers of oxidative stress.
